I make a pretty good lasagne, with layers of super vegetable-y tomato sauce and layers of creamy roast pumpkin and loads of onion and garlic. But the best part of this lasagne is the leftovers, which I had for lunch yesterday and lunch and dinner today. The even better news? My housemate’s gone back to Queensland for the weekend, so there’s enough for lunch tomorrow too!

The secret to amazing lasagne leftovers is not to reheat it. Cold lasagne doesn’t sound very appetising, in fact reading it, it sounds downright awful, but trust me on this one, it’s good. And it makes for pretty neat leftovers too, since the sauces aren’t hot they don’t run all over the plate making cutting it up so much easier!
